Short answer
32–48 amps covers almost every EV; match it to your car's onboard charger and your panel.
A 32A charger (on a 40A breaker) delivers about 7.7 kW; 40A (50A breaker) about 9.6 kW; 48A (60A breaker) about 11.5 kW. Buying more amps than your car accepts won't charge faster.
The breaker must be rated at 125% of the charger's current under the National Electrical Code.
